Apple Pie Oatmeal
2 cups of steel cut oats
3 apples, chopped
¼ cup of cold butter, chopped
Pumpkin Pie spice, approx. 2 tsp
Maple syrup to taste
Bake chopped apples with 1 tsp of pumpkin pie spice, butter and juice of ½ lemon at 400 degrees for approx. 20 min. Makes 5 portions.
Chicken and vegetable soup
1 whole chicken or 6 drumsticks or thighs
2 rutabagas or turnips
2 giant carrots or 4 small ones
4 stalks of celery
herbs to taste
splash of apple cider vinegar
Chop vegetables, and add with chicken to cold water along with herbs, salt and pepper to taste, and a splash of vinegar. Heat until the water comes to a simmer and reduce to very low. Cook for 2-2.5 hours. Remove chicken and shred. Add it back to stock. Reserve and freeze some stock if desired. Makes 5 generous portions.
Protein of choice (I used 5 wild shrimp)
Bacon of choice (About 1 rasher or a few tablespoons, chopped)
2 cups of cold brown rice
2 tbsp of soy sauce
2 cups of vegetables of choice (I used mushrooms, peppers and onions)
½ cup of frozen peas
2 cloves of garlic, chopped
sesame seeds or sesame oil to finish
chilli if desired
Fry bacon until crisp on medium high. Add vegetable and stir fry. Remove. Cook protein of choice and remove. Fry garlic in tbsp. of oil. Add cold rice. Stir fry and add eggs. Add soy sauce. Add all remaining ingredients and serve with chilli sauce, sesame and green onions, and top with reserved protein.
